The Mercado Borbón is a sprawling maze of corrugated metal roofs and tight corridors, easily identified by the mountain of crates stacked high against its outer walls. While newer markets in San José lean toward sanitized tourism, this space remains the city's primary wholesale engine for fresh produce. Farmers from the surrounding highlands drive their trucks directly into the market aisles in the early morning hours to sell massive quantities of plantains, onions, and peppers to street vendors and local cooks.
