The Annai Fish Fry is identified by a stack of plastic crates and a large, blackened iron griddle positioned right on the edge of the sidewalk. It began as a tiny makeshift setup run by a woman who spent her mornings at the Kasimedu fishing harbor selecting the day's catch. She cooked the fish in a heavy masala paste on that same griddle, serving it on banana leaves to laborers coming off their shifts. The heat from the spices defines the stall.
