The sign for Basterma Mano hangs over a modest storefront, identifiable by the distinct, dark red spice-crusted logs of cured beef hanging in the window. Mano Aslanian started this shop in nineteen sixty-five, after settling in Bourj Hammoud. He brought his family recipe for basterma, an Armenian cured meat, which involves coating beef in a thick, pungent paste of garlic, fenugreek, and paprika. The air inside holds that sharp, savory scent, and the shop remains a family operation today.
