The faded yellow sign hanging above the entrance of Ruen Pair shows a bowl of noodles and the name in bold red letters. Inside, the menu is thick with dishes that do not compromise on heat or tradition, like their crispy watercress salad or the preserved egg with stir fried basil. When the restaurant opened in nineteen ninety-four, it became a late-night destination for cooks from other kitchens across the city, who came here after their own shifts ended to find a proper meal.
