You are walking where a massive industrial empire once stood. Before the current square existed, this entire block was occupied by the Say sugar refinery, a facility that defined the landscape and economy of the thirteenth arrondissement for over a century. Founded in eighteen thirty-two by Louis Say, it grew to be one of the most powerful refineries in the world, processing tons of sugar daily right at the edge of old Paris.
