The bright yellow facade of Panaderia Amarela cuts through the dense green jungle foliage of Tulum. This bakery serves as a daily hub for locals and visitors alike, drawing crowds for its sourdough loaves and almond croissants. When the bakery first opened, owner and head baker Carlos Gaitan baked every batch in a tiny, hand-built oven to replicate the techniques he mastered in his home country. That small setup grew into a kitchen that now supplies bread to restaurants across the region.
