Famous Özcan Pickles

The narrow storefront of Özcan Turşu is packed floor to ceiling with glass jars holding neon-bright peppers, garlic cloves, and beets submerged in brine. Started in nineteen thirty-five, the shop preserves a craft that once defined Istanbul street life. While neighborhood pickle makers have largely vanished, this family keeps the vats full using the same fermentation techniques as their founder. A customer might stop here to taste a single pickled green tomato or walk away with a plastic bag of spicy cucumber juice.
