Completed in 1948, the Buon Gusto Sausage Factory was designed by architect Martin J. Rist to facilitate the mass production of Italian meats, a stark contrast to the small, basement-level operations that previously defined the neighborhood. Owner Federico Casissa equipped the facility to process 25,000 pounds of salami and sausage weekly, aiming to become the largest producer of Italian specialty meats in the American West.
