Gian di Lassi sits near Hathi Gate with a wide, open storefront usually obscured by a dense crowd of people clutching tall, heavy steel tumblers. The shop is famous for a lassi so thick that a spoon stands upright in the yogurt. Gian Chand began serving this drink in nineteen twenty-two, hauling milk from local farms before the sun rose. He famously topped each glass with a thick, golden layer of homemade malai, or clotted cream, harvested directly from the boiling vats.
