Ganso Ramen Yokocho Sapporo

A narrow alleyway, barely wide enough for two people to pass, cuts between the buildings here. This is Ganso Ramen Yokocho. After the Second World War, a row of food stalls popped up in this spot to serve local workers. The cooks started serving miso ramen, blending rich pork broth with fermented soybean paste to keep people warm through the brutal Sapporo winters. The original stall owners stayed for years, building a reputation for steaming bowls served in a cramped, bustling corridor.
