Miyakoshiya Coffee

The Miyakoshiya Coffee shop in Sapporo is recognizable by the dark, heavy timber framing and the warm, golden glow spilling onto the pavement from its wood-paneled storefront. Founded in nineteen eighty-five, it occupies a space built around the philosophy of the traditional Japanese coffee house, or kissaten. The founder, Noboru Miyakoshi, insisted on using high-quality beans roasted in small batches to ensure the flavor profile matched his exacting standards, prioritizing the craft of the hand-drip brew over mass production.
