A wooden facade with a darkened, shopworn appearance marks the entrance to Honda Miso Honten. Since eighteen thirty, this shop has served the imperial kitchen, earning a reputation for the white miso once reserved exclusively for the nobility. During the Meiji Restoration, when the capital moved from Kyoto to Tokyo, the imperial family left, but the shop kept its original recipes. It remains a family business, still operating from the same street where it began nearly two centuries ago.
