The wooden facade of Sawai Shoyu Honten features deep, dark timbers and a series of tall, slatted windows that reveal rows of ceramic vats inside. This shop has occupied the same spot since eighteen seventy-nine. While other brewers moved to modern stainless steel factories, this family stuck with their original cedar barrels. The resident yeast cultures living in those gaps and crevices give their soy sauce a distinct, mellow profile that cannot be replicated by automated equipment elsewhere.
