This shop has occupied the Nihombashi area since seventeen ninety-nine, operating as a specialist in katsuobushi, or dried bonito flakes. The founder, Takatsu Ibeyoe, started the business to supply high-quality dashi ingredients to the local population. Even after centuries of urban development, the company maintains its focus on this single, essential pillar of Japanese cuisine, still managed by descendants of the original family.
