The Läderach store in Zermatt sits behind a heavy wooden facade, its shelves filled with large, broken slabs of chocolate called FrischSchoggi. Rudolf Läderach invented a process in nineteen seventy to produce ultra-thin chocolate shells, which allowed his fillings to melt more quickly on the tongue. While the company began as a small operation in a village near Glarus, they eventually opened this shop to reach the tourists passing through the car-free streets of Zermatt on their way to the Matterhorn.
