The Horu-Käserei stands out as a low, stone-walled building nestled among the wooden chalets of Zermatt, featuring a prominent, glass-fronted aging room where wheels of cheese sit stacked from floor to ceiling. This facility processes raw milk sourced exclusively from cows grazing on the surrounding alpine pastures. Hans-Peter and his team built this dairy to revive traditional Zermatt cheesemaking, which had nearly vanished as the town shifted its focus entirely toward tourism. The cellar holds wheels waiting for their perfect maturity.
