The copper brew kettles visible through the ground floor windows identify the Bourgogne des Flandres brewery. This building occupies a sliver of land along the Kartuizerinnenstraat, where the current facility reopened in twenty fifteen. Its signature product, a blend of traditional lambic and local brown ale, relies on an open fermentation process that dates back to the nineteenth century. Master brewer Thomas Vandelanotte oversees the aging in wooden casks here, maintaining a brewing tradition that disappeared from the city center for decades.
