A row of clear glass jars filled with colorful, dusted cubes of turkish delight lines the window of the Ali Muhiddin Hacı Bekir shop. Founded in seventeen seventy-seven, this is the oldest shop in Istanbul to sell lokum. Bekir Efendi came to the capital from a village in Kastamonu and opened his small kitchen here, replacing the traditional honey and molasses binders with refined sugar and starch. He served the sultans in their palaces long before this storefront became a permanent destination.
