The red neon sign spelling out Phoenix Bakery glows above a storefront that has remained largely unchanged since nineteen seventy-seven. Inside, the glass display cases are filled with strawberry whipped cream cakes, a recipe Fung Chow Chan perfected after opening his first shop in nineteen thirty-eight. When the original Chinatown was demolished to build Union Station, Fung and his wife moved their business here. They maintained the bakery as a family operation, serving generations of local residents while the city transformed around them.
