The Piwnica Świdnicka occupies the cellar beneath the Old Town Hall, marked by a stone staircase leading directly down into the ground. It holds the title of the oldest restaurant in Poland, dating back to twelve seventy-three. For centuries, it served beer imported from Świdnica to citizens, kings, and poets. During the seventeenth century, the city council even mandated that residents drink this specific brew, creating a monopoly that filled the municipal treasury and kept the barrels flowing for generation after generation.
