Söderberg The Meadows

The Söderberg bakery in the Meadows sits behind a facade of glass and dark steel, tucked into the modern development where the old Royal Infirmary once stood. The windows display rows of Swedish cinnamon buns and cardamom bread that smell strongly of ground spice. Before the construction of these flats, this ground held the surgical wards of the hospital. In eighteen seventy-nine, surgeon Joseph Lister worked in these quarters to prove that sterile instruments drastically reduced the rate of infection after operations.
