The bright yellow corrugated metal shipping containers stacked and welded together distinguish Le Thai from the concrete storefronts lining Fremont Street. Dan Coughlin opened this restaurant in twenty-eleven after selling his car and draining his savings to source authentic ingredients. He started by hauling tubs of Thai noodles out of his own kitchen. Within months, the crowds pushed him to expand into the adjacent lot, creating a courtyard where the kitchen now hums behind those repurposed steel walls.
