A row of green shutters and white frames marks the entrance to A Cubana, tucked right into the side of the Praça da Sé. Since nineteen thirty, this shop has churned its own ice cream using fresh tropical fruits from the Bahian countryside. Antonio Ribeiro, an immigrant from Spain, opened the doors during a time when few people in the city were selling cold sweets. He spent his mornings boiling down mangaba and umbu, serving them to anyone passing through the city center.
