Old Famous Jalebi Wala is marked by a deep, bubbling vat of golden syrup kept at a constant simmer right by the front counter. Nem Chand Jain opened this shop in eighteen seventy-two, settling in the shadows of the Jama Masjid. He developed a recipe using khoya and saffron that moved his stall from a street-side operation to a permanent fixture. His descendants still run the kitchen, frying each batch of fermented batter in pure ghee as the heavy scent of sugar fills the air.
