Paranthe Wali Gali

Paranthe Wali Gali stays narrow, winding through the heart of Chandni Chowk with a permanent scent of frying dough and clarified butter. The street holds a series of small, deep shops where cooks submerge flattened circles of wheat flour into bubbling vats of hot ghee. While the alley dates back to the seventeenth century, these specific shops began their trade in the eighteen seventies. Pandit Gaya Prasad Shiv Charan opened the first one, eventually serving paranthas to Jawaharlal Nehru and Indira Gandhi.
