The Konna Monja shop features a distinctive wooden storefront with a large, traditional noren curtain hanging across the entrance. Inside, the business focuses entirely on yuba, or tofu skin, made fresh daily in the workshop located right behind the sales counter. In the early nineteen hundreds, the family began perfecting their technique for layering the delicate sheets of soy milk film. They still pull the thin, translucent skins from boiling vats by hand, cooling them in the humid air of the small kitchen.
