Mercado de San Juan Pugibet

The Mercado de San Juan Pugibet is a low-slung, unassuming building defined by the endless stacks of crates and crates of unusual ingredients piled near its metal roll-up doors. While other markets in Mexico City focus on local staples, this place earned a reputation as the city's culinary laboratory. In the nineteen sixties, vendors here began sourcing imported cheeses, wild game, and rare insects to supply the kitchens of high-end chefs who could not find those ingredients anywhere else in the country.
