Chaina Ram Sindhi Halwai sits behind a simple, crowded storefront in Fatehpuri, identifiable by the stacks of golden, syrup-soaked sweets visible through the glass. Chaina Ram founded the shop in Lahore in nineteen oh one. When he fled to Delhi during the Partition in nineteen forty-seven, he carried nothing but his recipes. He restarted the business on this corner, using the same copper pots and techniques he brought from across the border to serve Karachi halwa and hot, crisp samosas to his new neighbors.
