Moulana Halwai Old features a wide, grease-stained stone slab piled high with steaming heaps of petha and mawa kachori, framed by a darkened, soot-covered arched entrance. Since the late nineteenth century, this shop has operated from this spot in the crowded Ramganj Bazar. While the founder earned his reputation crafting intricate sweets for the royal household, the shop eventually became the local standard for syrup-soaked confections. Workers still pack cardboard boxes by hand while the scent of cardamom hangs heavy.
