The Yamamoto Noriten headquarters on the corner of the Nihonbashi district features a long, smooth glass facade that wraps around the street level. This shop began in eighteen forty-nine when Yamamoto Tokujiro opened a stall near the Nihonbashi fish market. He convinced the Emperor Meiji to adopt his seasoned seaweed as a standard gift for visiting dignitaries. The company still prepares that same toasted seaweed recipe today, holding a royal warrant that traces back to the nineteenth century.
