Confectionery Jafar

The storefront of Confectionery Jafar displays deep, recessed arches of carved stone that open into a narrow, bustling workspace. Since the late nineteenth century, this shop has functioned as a primary kitchen for knafeh in the Old City. Iskandar Jafar began the business, and his descendants continue to use his original copper trays and techniques. They heat sweet cheese and shredded pastry over open flames until the edges turn golden and crisp. The clatter of metal trays provides a constant rhythm here.
