The Chikusa Cafe stands out on the street with a quiet, weathered wooden facade and hand-painted signs that lean against the entrance. It began as a small project by a Japanese expat who moved to Kathmandu and wanted to bridge two distinct food cultures. Inside, the menu centers on a blend of traditional Nepali ingredients prepared with Japanese techniques. The owner spent his first years sourcing local mountain vegetables to recreate specific flavors from his childhood in the Nagano prefecture.
