A bright red coffee machine anchors the counter of Vudu Cafe, standing out against the sleek, dark timber finishes of the interior. When Shaun and Vicky Barns opened the doors in nineteen ninety-nine, they served coffee from a tiny caravan parked nearby. They built this permanent space to capture the morning light reflecting off the blue waters of Lake Wakatipu. Patrons wait in long lines here for a slice of the lemon polenta cake, a recipe that has stayed on the menu for decades.
