The Chäsbueb shopfront is painted a deep, matte black, marked by a gold-lettered sign that sits above a narrow display window. Inside, the walls are lined with wheels of mountain cheese that smell like damp earth and caves. This deli exists because Hans Schmid decided in nineteen fifty-seven that Bern needed a shop dedicated entirely to local dairy. He spent his mornings driving his truck to remote farms in the Emmental valley to hand-select the raw milk wheels before anyone else arrived.
