Rudy's Pizza Napoletana - Ancoats

The storefront at Rudy's Pizza Napoletana features large, floor-to-ceiling windows that frame a wood-fired oven glowing at the back of the room. This space started as the original home of a brand that grew from a single mobile pizza oven in a van to a national fixture. In twenty fifteen, Jim Morgan and Kate Wilson opened their first permanent site here in a converted Ancoats warehouse, choosing a dough recipe that relies on twenty-four-hour fermentation to achieve its signature soft, charred crust.
