The storefront features floor-to-ceiling glass windows that reveal the entire cheesemaking process on the other side. Vats, stainless steel piping, and thick blocks of curd sit in full view of the sidewalk. Kurt Dammeier opened this shop in two thousand three to bring artisan food production back into the city center. He sourced local milk from grass-fed cows and began turning out his flagship cheddar right there in the window. Customers watch the vats fill while waiting to buy the finished wheels.
