Jean-Marie Gurné opened this restaurant as a deliberate hybrid of fine dining and a theater, installing a small stage inside the dining room. Jean-Marie Gurné wanted guests to experience the sensory crossover of high-end gastronomy and live performance in an intimate setting that barely seats forty people.
