The Varvakios Central Municipal Market occupies a vast, iron-roofed hall that anchors the Athens food trade. Its long, parallel aisles overflow with rows of whole fish on crushed ice, hanging carcasses of lamb, and crates of herbs sourced from the surrounding countryside. Ioannis Varvakis, a wealthy Greek merchant who made his fortune in the caviar trade, funded this structure in the late nineteenth century. He envisioned a central hub where the city’s residents could buy their provisions directly from primary producers.
