Fukuoka nakasu Food Stalls Street

The Nakasu food stalls, or yatai, occupy the thin strip of land where the Naka and Hakata rivers meet. Each stall is a compact, wooden structure that pops up on the sidewalk every evening. After the Second World War, hundreds of these stalls lined the city streets to serve quick meals to rebuilding workers. Today, only a small cluster remains. One owner, who spent forty years operating his stall, once famously kept his ramen broth recipe entirely in his head, refusing to write it down.
