La Boîte à Café sits behind a narrow, dark wooden storefront on the Rue de Bonald. Its front window serves as a gateway to the specialty coffee movement in Lyon. While many cafes rely on mass-produced beans, this shop functions as an experimental laboratory. Nicolas Piégay opened the doors here to roast his own batches on-site. He insists on transparency, tracing every bean directly to the specific farm where it was harvested, a practice that fundamentally shifted how locals buy their daily caffeine.
