A long line often spills out from the glass display case at Galparsoro Okindegia on Calle Mayor. Inside, the shelves hold trays of warm, butter-heavy croissants and thick slices of talo, a traditional corn flatbread. Before current owners Rakel and Xabier took over, this shop belonged to a local baker named Galparsoro who worked the ovens for decades. He retired, but the neighbors kept coming for the sourdough, and the new team decided to keep the original name painted on the window.
