The red door on the Calle de Fermín Calbetón belongs to Gaztelubide, a private gastronomic society that functions as a culinary sanctuary. Inside this basement space, members gather to cook, eat, and hold court behind closed doors, away from the bustling streets of the Old Town. In nineteen sixty-six, the society hosted the recording of a famous album by the singer Mikel Laboa. While the city outside moved to its own rhythm, the members were busy preserving traditional Basque recipes in their communal kitchen.
