This shop started when two Frenchmen, Yann Fougerat and David Boiron, moved to Victoria and noticed a gap in the local market for authentic French macarons. They began experimenting with savory flavors alongside traditional sweet ones, such as balsamic vinegar or Earl Grey tea. Today, the small shop focuses exclusively on these almond flour cookies, producing hundreds of delicate, colored shells by hand every single day.
