Green Cuisine is housed in the historic Market Square, where brick archways and open courtyards define the architecture. Since nineteen ninety, this spot has operated as a vegetarian buffet, a concept that set it apart in a city often dominated by seafood and traditional pub fare. The owners installed heavy wooden tables salvaged from old buildings and focused on sourcing ingredients from nearby Vancouver Island farms. Even now, the steam table layout remains unchanged, prioritizing volume and variety over table service.
