The Nicolas Alziari olive mill stands out with its bright, butter-yellow facade and the distinct smell of pressed olives that often drifts into the street. It is the last remaining operational mill in the city, using eighteenth-century hydraulic presses to produce its oils. In nineteen twenty-eight, Nicolas Alziari decided to keep his equipment running right here in the heart of Nice while other producers moved to modern industrial facilities outside the city, preserving a way of working that dates back generations.
