Fenocchio

A bright, neon-lit sign hangs above a cluster of silver metal canisters packed into a narrow, stone-walled storefront. This is Fenocchio, an institution in the old town of Nice that opened in nineteen sixty-six. While other shops serve traditional flavors, Fenocchio gained its reputation by experimenting with ingredients found in local gardens. Jean-Paul Fenocchio once spent an entire season testing savory options, eventually offering ice cream flavored with rosemary, thyme, olive, and even black olives harvested from the surrounding hills.
