The storefront of Chez Thérésa features a simple, hand-painted sign and an open window where people queue for slices of socca. This small shop serves a chickpea pancake, a traditional Niçois snack made from flour, water, and olive oil, cooked in a copper pan over a wood-fired oven. Thérésa Arbeau started selling the dish from a bicycle in the nineteen fifties, eventually settling here in the heart of the old town where the recipe remains unchanged from those early morning street sales.
