Kachaudi Gali is a narrow, limestone-walled passage in the heart of Varanasi that holds the lingering scent of deep-frying batter. It takes its name from the kachaudi, a spiced, crisp flour disc that shopkeepers have prepared in these cramped stalls for generations. In the late eighteen hundreds, a local cook named Ramlal established a small hearth here, serving pilgrims who emerged from the nearby river ghats. His recipe for potato-stuffed bread became the standard for every street vendor who followed him.
