De Nieuwe Molen is a whitewashed, circular stone tower rising above the modern rooftops of Stellenbosch. This windmill was constructed in seventeen twelve to grind grain for the growing Dutch settlement. For decades, it served as the primary source of flour for the valley, relying on the predictable southeasterly winds to turn its massive sails. During the eighteenth century, the miller lived in the small cottage at its base, keeping his eye on the weather and the pace of the grinding stones.
