The Silver Dragon Restaurant occupies a building marked by the distinctive, sweeping red eaves of traditional Chinese architecture perched above a modern storefront. Established in nineteen sixty-six by the Chan family, it became the first full-service Chinese restaurant in Calgary to feature dim sum. Before that, most local Chinese dining spots focused on quick takeout or Westernized menu items. The Chans insisted on serving authentic Cantonese dishes, even when many diners were unfamiliar with the cuisine.
